Dr. Tandir: Šta je najbolje jesti za iftar i sehur, koje namirnice izbjegavati tokom ramazana

Kada je riječ o sehuru, prema riječima dr. Maje Tandir, specijaliste nutricionizma, prvenstveno se treba bazirati na lipide i proteine, odnosno hranu koja će organizmu pomoći da izdrži cijeli dan.

– Nutricionizam je nauka koja je posvećena svakome osobno, ali ipak, neke stvari mogu se izvući kao svojevrstan vodič. Moja preporuka je da na sehuru postač unese u organizam orašaste plodove. Vrlo su popularni šejkovi sa orašastim plodovima, hurmama i mlijekom. Moj drugi prijedlog bi bio šejk sa bananom, mlijekom i cimetom. Takav napitak tokom cijelog dat će organizmu potrebnu energiju. Na sehuru treba izbjegavati ugljikohidrate, barem ih ne treba unositi u većim količinama. Namirnice bogate ugljikohidratima više su za iftar. Na sehuru možete popiti i kafu, ali ne treba biti jaka. Vrlo je važno na kraju obroka uzeti dovoljno vode, bez obzira što će to možda poremetiti san ako će se postač ponovo vratiti u krevet – objašnjava Tandir.
Kaže kako i sam završetak posta (iftar) treba početi vodom.
– Neki iftar počinju drugom tečnošću, što u većini slučajeva teško “pada” na želudac, jer izaziva metabolički poremećaj. Zbog toga je najbolje “omrsiti” se čašom vode uz koju ćete pojesti jednu, najviše dvije hurme. Nakon toga dobro je napraviti pauzu. Ono što je važno jeste da se u nastavku iftara unesu vlakna, hranu koja ima nizak indeks sitosti i koja se brzo vari u gastrointestinalnom traktu. Preporučila bih povrtnu supu ili neku laganiju čorbu sa povrćem. Tokom iftara mogu se unositi i ugljikohidrati koji su potrebni za energiju. Kod nas su popularne pite, pa ko voli može, samo ne treba pretjerivati. Moj stav, kada je iftar u pitanju, jeste da jela trebaju sadržavati žitarice, povrće, gljive koje su jako dobre, voće, mliječne proizvode, poput kiselog mlijeka i kefira. No, ono što bih preporučila jeste da se, koliko je god moguće, izbjegavaju pržena jela, a da se prednost da kuhanim obrocima – napominje Tandir.
Topa je tradicionalno nezaobilazno jelo na našim prostorima na početku iftara. No, Tandir ističe, kako sa ovim jelom treba biti oprezan.

– Topa je visokokalorična, puna masnoća, no, s druge strane nezaobilazno iftarsko jelo na mnogim ramazanskim soframa u našoj zemlji. Moje mišljenje je da ako se iftar počne topom, da sa topom i završi obrok, jer će postač njom i somunom unijeti sasvim dovoljno energije koja je potrebna za naredni dan – kaže Tandir.
Savjetuje da se meso i mesni proizvodi reduciraju tokom posta.
– Meso, naročito crveno, nije neophodno, i postač će svoje energetske potrebe zadovoljiti voćem i povrćem. Idealno bi bilo konzumirati meso koje je kupljeno od provjerenog mesara, koje nije tretirano raznim preparatima, a patom ga lešo skuhati, najbolje na pari. Piletina i puretina jesu zdrave namirnice i preporučuju se, naročito tokom posta, ako su perad iz slobodnog uzgoja. No, u gradovima je jako teško naći pile koje nije hranjeno genetski modificiranom sojom – ističe Tandir.
Iftar obično završava nečim slatkim. Naša sagovornica ima savjet i kada su deserti u pitanju.
– Može zdjelica sutlije, posuta cimetom koja nije pretjerano slatka ili neki kolač, poput bombica, koji ste sami pripremili od orašastih plodova i hurmi koje će ih zasladiti. Baklavu, ružice, hurmašice, koji su jako energetski bogati kolači, u ovom periodu treba reducirati, pogotovo na početku ramazana, kada većina ljudi organizam tek uvodi u post – kaže Tandir.
I na iftaru i sehuru najbolje je, dodaje, piti vodu i ne previše zaslađene napitke, poput limunade, kompota, biljnih čajeva.
– Iftar može početi limunadom, ali nezaslađenom, jer u protivnom u organizam ćete unijeti nešto “poput kamenja”, a ne zdravi napitak. Naravno, preporučuju se i kiselo mlijeko i kefir – zaključila je Tandir.
