Visočka pečenica uskoro će biti zaštićena kao brend
“Proizvođači mesa iz drugih krajeva države u namjeri da lakše prodaju svoj proizvod, suho meso potpisuju kao ‘visočku pečenicu’, a tome želimo stati u kraj”, kazao je Feni Edin Babić uime Udruženja mesoprerađivača ”VIPS” Visoko, u osnivanju.
Kaže da je osnivanje udruženja bilo uslov da visočka pečenica dobije oznaku i ističe da je udruženje bilo napravljeno i prije više od 15 godina, ali da nisu uspjeli ostati u funkciji.
“Sada smo se ozbiljnije organizirali jer moramo zaštiti naš proizvod. Čim završimo registraciju udruženja krećemo s procesom zaštite, a sve papire smo spremili”, naveo je Babić, te naglasio da proces proizvodnje pečenice u Visokom datira od prije 150 godina.
Smatra da će udruženje do kraja ove godine biti i formalno registrirano, a do sada se članstvu odazvalo gotovo 30 visočkih proizvođača mesa, od 45 malih obrtnika i pet industrija mesa.
Na ovoj ideji već deceniju radi profesor s Poljoprivredno-prehrambenog fakulteta u Sarajevu Amir Ganić, a unazad nekoliko godina dobio je podršku kantonalnog resornog ministarstva Zeničko-dobojskog kantona i Općine Visoko.
“Želim da zaštitim tradicionalni visočki proizvod, visočku pečenicu, na način da se zaštite sve tradicijske i kulturološke vrijednosti koje je taj proizvod imao i ima i danas”,kazao je Ganić.
Ističe da se javljaju plagijati koji “skrnave” kvalitet visočke pečenice.
Ganić smatra da se zaštitom ovag suhomesnatog proizvoda stvaraju temelji za promociju cijelog grada.
Rekao je da se specifičnost visočke pečenice ogleda u tehnologiji njenog pravljenja, što utječe na ukupni kvalitet proizvoda.
